Strawberry Rhubarb Crisp



A little zest of lemon.

Does it really get any better?

Ah yes. It does.

With everything else you need most likely lurking in your pantry right now, you can indulge yourself with this summery creation just as soon as you hit the farmer’s market for some strawberries and rhubarb!

Strawberry Rhubarb Crisp

  • 1  1/2 cups diced rhubarb
  • 3 cups sliced strawberries
  • fine zest of 1/2 lemon
  • juice of 1/2 lemon
  • 1 cup sugar
  • 2/3 cup flour
  • 1/2 tsp cinnamon
  • 1/2 cup brown sugar
  • 1/2 cup rolled oats
  • 2-3 Tbsp butter
  • A little ice cream to serve on top!

Mix together strawberries, rhubarb, lemon zest and juice, sugar, 1/3 cup flour, and cinnamon.  Spread fruit mixture into a buttered/greased 8 inch pan.

Combine the remaining dry ingredients and butter and sprinkle evenly over the fruit mixture. (It’s not nearly as enticing as the fruit part at this point….)

Bake at 375 for 30-40 minutes.  It will be all nice and bubbly around the edges and the topping will be golden and crispy.

Mmm…. the taste of summer……
